A lot of our customers have been looking for alternatives to regular wheat breads lately, whether it is for dietary reasons or just as a change. Mass produced bread, in our opinion, has spurned a new wave of intolerances to what should be the staff of life. We have found people that have been diagnosed with ‘wheat intolerance’ can STILL eat our regular wholemeal breads, in moderation, without any discomfort whatsoever. This has led to an increase in demand for spelt bread. Spelt wheat (triticum spelta) is considered the original form of wheat, a product that the Romans would have used to make their breads. It is more natural and nutritious for your body than most naturally occurring milling wheat. It needs a little more care and attention in the bread making process, which after some time we have perfected, but when made correctly the bread produced is a wonderful, aromatic wholesome wholemeal spelt bread which is as universal as any other.
